I wanted to see if killing/grinding pigmen in the nether was OK? Not using a portal or spawn mechanic but rather building a safe place to hit them with a sword.

From the rules I figured that didn't violate the mention of gold farming (e.g. Portal gold farm) but I wanted to be sure

Grinding pigmen in the nether is fine, just no portal gold farms as you mentioned.
