I've been reading through the VCwiki page to do residence but can't find the answer I'm looking for on doing subzones.  When selecting a res area you can add to your selection using  "/res area add [resname] [areaname]". So you would be able to res an odd shape, something other than a cube, such as a L shaped building. Is it possible to add to your selection on a subzone in the same manner?

No. Subzones must be a cuboid polygon. Perhaps consider multiple subzones, and the use of the "/res mirror [Source] [Target]" command to make duplicating permissions easier.
