Snow- What item was it?  I don't think any items were left off the "drop" list, (if it's not addable to a shop, it should be dropped) but something might have been missed.  Especially if the item was enchanted or one of those obscure McMMO potions.

If it was clothing, double check to make sure that it didn't get put on you.  Also be sure to check for any empty blocks near the sign....the dropped items might get caught in them.

Non-enchanted chestplates?  I know chain is expensive to test with, but try with shears.  Is this a consistent thing?  If it's not consistent, then I would again emphasize them getting dropped, but then pushed into empty blocks, seeming like they weren't dropped.  If it is consistent, I'm sure frelling can take a look at what is going on.

Not having any specific details, I can only conjecture.

Both shears and chainmail armor can be put into a shop, provided they only have minimal damage. Also keep in mind that a shop will accept enchanted items, but will clear the enchantment. Items that are too damaged or not recognized by JCShops will be dropped around the player. Make sure that you don't have any nearby hoppers as they will gladly suck them up. Check any "levels" below you, especially if you use slabs - sometimes MC dropped items will "fall through" slabs.
