If I'm standing in one spot, and looking in one direction, how many blocks away can I see? Thanks.

Don't quote me on this but I think it depends on what settings you have. I know, through using Optifine, you can set the setting to extremely far and that loads huge amount of chunks.

I have my settings set on far render distance, no optifine, and in the area I am digging for
you (200x200) I am unable to see the walls from one end to the other. I actually can see
the sky because the chunk blocks arent loaded. So by that, I can narrow it down to between
100 and 200 blocks, atleast for far render distance.
As for how many chunks the server loads (unless configured manually somewhere) I believe
I read that 20 chunks are loaded at any given time around a player. With there being 4
cardinal directions that puts it at 5 chunks in any direction away from the player, or roughly
80 blocks.
I realize the second part probably isnt what you were looking for, but is what the server actually
"loads", even though it is separate from the render distance you see on your client.

The number of loaded chunks loaded is a server setting. I believe it was set to 3 chunks around the player at one point but has been bumped back up to the default of 5. Not positive if this is still the case, but I know there was talk of potentially raising it once we are on a dedicated hardware solution.

Thank you to both of you - was exactly what I was looking for. I should have asked this prior to having you dig the area, but meh 
To Stevo: So if I'm standing in that center spot, the 80 blocks behind me, 80 in front, 80 to the left, and 80 to the right are where my farm will be loaded into the server memory and able to grow, anything past that will be static unless I move closer to it. So really to maximize it I should have had you dig 81x81
Maybe I'll just make a circular minecart track and hop in it for an hour while they grow, ideas ideas....

Rather than going purely horizontal, why not stack multiple layers?

The view distance is currently set to 6. If you are standing in a middle of a chunk you should be able to see 8+6*16 (136) blocks in all compass directions. You may be able to see farther but that depends upon the client how it caches older chunks; however, chunks outside of that range will not update until they are within the 13x13 chunk region around your avatar.
